    The dessert queen

Guru, Nianne-Lynn Hendricks, Published on 26/10/2018

» Pastry chef Arisara "Papier" Chongphanitkul was crowned Bangkok's Best Pastry Chef 2018 by BK Top Tables earlier this year and it is not an accolade that is easy to come by. Known for modernising Thai desserts, chef Papier trained at the Gastronomicom pastry school in France. Her desserts are often inspired by her working stints alongside pastry greats such as Sadaharu Aoki and Hugues Pouget in Paris, as well as Laurent Gerbaud in Brussels, but always with a Thai twist. In January this year, Chef Papier became the first Thai woman to compete in the international Ladies World Pastry Championship in Rimini, Italy. As group pastry chef for the Issaya group, she lends her creations to Saawaan, Issaya La Patisserie (for which she launched a cookbook last year), Issaya Siamese Club, Baan Phadthai and Le Cochon Blanc. And, for the jet setters, chef Papier also caters the desserts on Thai Smiles. Embarking on a new path in her culinary journey, chef Papier will soon launch her own patisserie, "Ici", where her love for everything praline and other sweets will shine through.

» Canadian Blake Dinkin is the creator and owner of the world's rarest and most expensive coffee, refined naturally by elephants — Black Ivory Coffee. Partnering with Ban Taklang in Surin and the Golden Triangle Asian Elephant Foundation, Dinkin produces "elephant dung coffee". However, production of Black Ivory Coffee provides valuable income for elephant care-giving families, as well as students who are taught how to wash and dry the coffee. The mission of Black Ivory Coffee is to take a negative situation, namely human-elephant conflict and turn it into a positive one by creating a luxury product that helps not hurts elephants, as Dinkin tells Guru.

Most existing restaurants adapted by offering delivery or a private chef experience in the comfort of your home, while others shut shop temporarily, a few permanently. Though the pandemic brought along unknown problems for existing restaurants, it hasn't deterred a few others from starting afresh. Nothing stops the food scene in Bangkok from growing, not even a global pandemic. ELITE speaks to the people behind new restaurants, which have opened or are opening soon

Best described as designed for the eco-conscious traveller, Treeline makes sure the balance between nature and urbanisation coexist in artistic harmony.
