» Developed by Italian chef Fabio Tacchella, Carta Fata is the commercial name of a new cooking technology using transparent plastic foil, heat resistant up to 230C, as a sole cooking container. The cooking process can be done in the oven, in water, boiling oil or on a grill, and with or without liquid. Similar to the sous-vide technique, its purpose is to help food retain its juiciness and aroma as well as keep the nutritional value.

Yet, it's been almost two decades since I last dined at Tee Pochana, and the finger-licking affair enlivened by tasty curry crab and aromatic grilled prawns continues to linger nicely in my mind.
