» Wasana Saipanya, 51, makes khao khaeb in her backyard. The batter which is made of rice flour, water, sesame and little salt is cooked on a white cloth sheet on top of a stove. Her helper takes each flour sheet from the stove by using a long stick and then spreads it on a long thatch panel for drying. Within three hours, the flour sheets will be dry. Before eating, they need to begrilled over a charcoal fire. The thin flour sheet will become crispy after being cooked.

Priced at 150 baht per kg, it was cheaper than what you would see elsewhere. But these crabs are tiny and apparently not worth all the cleaning, cracking open and picking to get at the small amount of meat. Furthermore, buying them means you are supporting the fishermen to catch immature animals.
