» It may sound like a hole-in-the-wall after-hours operation, but don’t be fooled by either the name or its franchised nature. The Great Kabab Factory indeed may live up to its confident usage of the adjective “great”, delivering a swathe of spices and flavours. In many Western eyes, the kabab is assumed in doner form or shawarma, to be shovelled down often on the go, more often late at night, most often after many drinks. But the Factory in question here is at the other end of the spectrum. It’s housed in the street-facing front room of the Majestic Grand Hotel. Formerly Italian restaurant Sak, the slightly curious location features a high ceiling that affords it plenty of light. There’s enough room for 70 diners and it would suit an Indian wedding banquet more than a room of discerning Thong Lor foodies, but maybe that’s what it’s about. The emphasis here is on the food and service, with 90 per cent of the staff hand-picked from India as thoroughly as the spices themselves, it seems. A feature of the place is the open kitchen where you can observe the chefs prepare the kababs and bread with flair.
