Published caption : This cold noodle dish is a speciality of Gangwon province. Called makguksu, it consists of buckwheat noodles in a clear soup that has been flavoured with kimchi. The texture of buckwheat noodles is dense and when eaten with this broth, the overall effect on the palate is a combination of sweet and sour. Makguksu is said to cool your body down, so it is normally eaten by Koreans during the summer months.
