» This small, oblong and compressed flatfish with light brown colour mottled with yellow and orange spots is unique to the Pacific Ocean and very popular in California. Sanddabs are often confused with other types of flounder including Rex sole, true sole and some small halibuts. The fish is best cooked simply with a bit of salt and pepper and a dusting of flour before being quick fried in butter.
